Thought for Thursday

 


I cooked tonight. I suppose I've mentioned or told you more than once how much I really do enjoy cooking and when I don't cook for an extended period of time I'm amazed that when I do cook how much I enjoy the process. And it's a true process I made old version of something I call Frank, a dish I learned from a guy named Frank bonacore and that goes back years and years. Anyway, just essentially a rice dish. I use chicken mostly. I had a bag of chicken that I found on the giveaway table a few months ago and it's been in my pantry ever since. Of course it's sealed and it's says it's full of white meat it was pretty mushy but I thought by the time I got it into the dish it would be all right. Then after an extended push or search I found a half a bag of brown rice that I stuck in the nook and cranny in the pantry a number of months ago. The rice look pretty good actually no bugs or slugs or anything else moseying around inside and the rice look good enough to eat. I put on some water to heat got it boiling, then I found a half a bag of the rice I also found with a couple chicken bouillon cubes. On the side I chopped up a couple stocks of celery, one onion, and I found a bag of what was left of a bag of frozen broccoli in the top of the freezer pushed all the way to the back. This was more than enough that I needed for Frank. I found the old skillet that I like to use through some oil in it then through the onions frozen broccoli and celery stir them up for a bit then added the rice but I had 3/4 of the way cooked. Added everything together stirred them up reduce the heat to Summer and covered the the frying pan as tightly as I could for 45 minutes or until the end of the news broadcast. By the end of the newscast what dinner was ready the rice is soaked up the rest of what little liquid was left in the skillet the broccoli also cooked nicely with the onions added everything to the rice mixed it up and was quite pleased with the result. I took a small bowl full the rice and vegetables sprinkle liberally with soy sauce and quite enjoyed my little brown rice dinner. It was just me for dinner and that's okay. I still have enough rice to put away for another meal at least. Now I just need to put away the rest of the dinner run some water in the frying pan maybe even take a minute and wash out the frying pan but not have to do it this weekend. I'm not going to be able to chew too much because tomorrow at noon I'm having two of my teeth extracted. I'm a little worried about the results and I don't think brown rice is going to do it. Depending on how well I feel following the extraction I may Wander over to KFC for a big container of mashed potatoes and gravy and maybe some chicken wings or legs. I once again totally destroyed my kitchen and we'll think about cleaning it up tomorrow. I still have to Garner the energy to put the dinner away. I didn't do much after returning home from the Market except cook dinner a couple hours later:-)
